CSA 2015: Week 4

It’s the fourth week of the CSA season from Colvin Family Farm, and this week’s box presents an opportunity and a challenge… What the heck am I going to do with all of this summer squash??? I still have some squash left from last week, and I could make a torte or casserole (or both) and freeze it. But I’ve been there, done that. I could always roast it or saute it or fry it or eat it raw, but I really want to figure out a new, creative way to cook yellow squash. If you have any ideas, please help!

The full list of the week’s produce:

  • Yellow squash (x5)
  • Globe zucchini
  • Cucumbers (x3)
  • Kohlrabi
  • Swiss chard
  • Lettuce (x2)
  • Green onions (Or are they spring onions?)
  • Curly kale
  • Basil
